MitoXcell Almond Butter Balls
These MitoXcell Almond Butter Balls have a great ratio of proteins to fats to fiber, so small amounts can really fill you up. The medium chain fatty acids in coconut oil are a quick source of energy for your brain and body making these indulgent little almond butter balls truly good for you.
1 cup smooth, organic almond, peanut, or other nut butter
2 Tbsp Barlean’s Organic Coconut Oil
1 Tbsp MitoXcell Superfood Blend
1/8 tsp ground cinnamon
3 Tbsp raw honey (or maple syrup)
1 3/4 cups puffed millet (or puffed brown rice cereal)
2 tbsp honey – heated until liquid form
1/4 cup almond meal
1 tbsp matcha powder
1/4 cup coconut flakes
HOW TO MAKE MITOXCELL ALMOND BUTTER BALLS
Combine coconut oil, honey and nut butter, MitoXcell and cinnamon in a small pot. On medium heat, melt ingredients together. Remove from heat as soon as the mixture has melted together. Do not overheat or these will not work. Add millet to the mixture and stir to combine. Let the mixture cool on the counter for 15 minutes before rolling into golf-sized balls. Roll balls in honey and coat balls with a mixture of coconut flakes and matcha powder or almond meal if desired. Store in the refrigerator.
